My Great Grandmother Mary-Jane Elizabeth Cure, worked at Essendon Airport in the TAA catering department.

She made the potato salad from there for her own family, and ever since it has become a favourite recipe for us all. I grew up eating it made by my grandmother Sheila Haig, and now make it for my own children.

The story behind this is actually that a man was eating the potato salad for lunch and my great grandmother commented on it. He was of European descent which is why it was a new recipe to Mary-Jane. He gave her some to try and she decided to include it in the menu for the airline! It wasn’t creamy because it kept longer.

TAA Airline Potato Salad

  • Peel and boil chopped potatoes.
  • Cool potatoes.
  • Finely chop 1 onion.
  • Finely chop parsley.
  • Add olive oil, salt and pepper to the potatoes so there’s a good covering over them.
  • Mix the raw onion and parsley through, and then add 2 tablespoons of apple cider vinegar
  • Add a little more vinegar/oil to taste if required.
  • Leave it to sit. The vinegar will soak in a little. Taste and adjust as needed.
